Bulgur Tacos

 

3/4 cup water

¼ cup bulgur

¼ chopped onion

1 8-ounce can tomato sauce

½ of a 1 1/8- or 1¼-ounce envelope (5 teaspoons) taco seasoning mix

8 ounces firm or extra-firm tofu, drained and finely chopped

8 taco shells, warmed

1½ cups shredded lettuce

1 medium tomato, chopped

½ cup shredded cheddar cheese

½ cup salsa

 

1. In a medium saucepan combine water, bulgur, and onion. Bring to boiling; reduce heat. Cover and simmer about 12 to 15 minutes or till bulgur is tender and liquid is absorbed.

 

2. Stir tomato sauce and taco seasoning mix into bulgur. Simmer, uncovered, for 5 minutes. Stir in tofu; heat through. Spoon into taco shells. Top with lettuce, tomato, cheese, and salsa.

 

Serves 4 main-dish servings.
