Grilled Lime-Cilantro Chicken

 

1/4 cup olive oil

1/4 cup fresh lime juice

2 T finely chopped cilantro

1 T honey

1 shallot, finely chopped

1/2 tsp ground cumin

1 tsp finely chopped lime zest

salt and freshly ground black pepper


3 large whole chicken breasts

 

Prepare the marinade:  in a small bowl, combine all the marinade ingredients and whisk to mix well.  Taste for seasoning.

 

Place the chicken breasts between 2 sheets of plastic wrap and pound to flatten slightly with a meat pounder or the flat side of a cleaver.  Arrange the chicken breast in a large shallow non-aluminum dish and pour the marinade evenly over them.  Turn the pieces to coat evenly.  Cover and refrigerate for 2 to 4 hours, turning several times to make sure the marinade covers all the chicken.

 

(I cooked the chicken on the stovetop, but hereÕs what youÕre supposed to do): prepare a charcoal or gas grill for medium-high-heat grilling about 3 inches from the fire. Remove chicken from marinade and place on grill rack.  Grill, turning once, for 7 to 10 minutes on each side or until juices run clear when pierced with a   knife.

 

Serve with tomatillo salsa or regular salsa.
