Pappardelle with Olive Paste and Gruyre
For 2 as a main dish.
½ pound dried pappardelle
1 T olive oil
1/3 cup black olive paste
1 T pine nuts
¾ cup finely grated cheese
Cook the pappardelle for 6 minutes in boiling salted water. Drain. Pour the oil into a medium gratin dish and add the drained
noodles. Toss the noodles in the
olive oil and the olive paste.
Cover with the pine nuts and the grated cheese. Bake in a preheated 400¡ F oven for
15-20 minutes, until the cheese has turned crispy, the dish is singing, and the
pasta on top is slightly crisp with the underneath moist and fragrant.
